Ordinary biryani
Materials:
Meat - 1 kg (with bones)
Potatoes - I wish
Polaway rice - 1/2 kg
Ginger-garlic paste - 2 tablespoons
Sour yogurt - 3 tablespoons
Nutmeg + Jayatri Bata - 1 teaspoon
Chili powder - 1 teaspoon
Onion crumbs - one and a half cup
Cardamom - 5
Bay leaves - 2
Cinnamon - 2 pieces
Cloves- a few
Whole green pepper - 8-10
Prunes - 5-6
Ghee - 2 tablespoons
Keora water - 1 teaspoon
Oil - as needed
Salt - to taste
Preparation:
Wash the meat and drain the water. Marinate the nutmeg, jaggery, ginger-garlic paste, chilli powder, cardamom, cinnamon, cloves, sour curd and salt for half an hour.
Heat oil in a pan, peel the potatoes, add a little turmeric and salt and fry till golden. Fry 1 cup chopped onion in the remaining oil. When the onion turns red, season it with spices and meat. When the oil floats, add warm water. When it boils, add the fried potatoes, cover over medium heat and wait until the meat is cooked.
Wash the polao rice and add water. To make biryani, heat oil in a pan and fry 1/2 cup chopped onion. When the onion is soft, add water with dripping rice. Rice should be given twice the amount of water. When the water boils, stir lightly and add the cooked meat. Cover the pot with whole green chillies, salt and prunes to taste. Add ghee to the biryani and reduce the heat to low and simmer for 15 minutes.
